Agri Yamazaki registers Daruma as a trademark in the US

1. Following the directions for your rice cooker, put the correct amount of rice in a bowl, add water, and gently rinse the rice.

2. Add water to the rinsed rice and let the rice soak for 30 to 90 minutes, and then strain the rice in a strainer or colander.

3. Transfer the rice to the inner pot of your rice cooker, add water to a level just 2 mm below the amount of rice you are cooking, and turn the cooker’s switch on.

4. When it has finished cooking, stir and mix the rice, and put it in another bowl to let it cool down.

5. After slightly moistening the palms of your hands with water, take half the amount of rice you are going to use for your onigiri, and put the ingredient(s) of your choice in the center.

6. Put the remaining half of your rice on top, and gently shape and mold the onigiri.

7. Salt can be added to suit your taste.

8. Wrap your finished onigiri in a sheet of nori seaweed.
